RECIPE OF NIHARI GOSHT, 2022-2023

What Is Nihari?

Nihari is an old-fashioned dish of Muslims of Bhopal, Delhi, and Lucknow. In 1947, many Muslims migrated to Pakistan from India and started their restaurants. Nihari had become famous and now nihari is famous all over the world. So, There are many types of nihari but nalli nihari is popular among all.

INGREDIENT FOR NIHARI GOSHT

FOR MASALA 
Meat1 kg
Oil200 ml
Ginger-garlic paste1 tsp
Onions1
Chili powder1 tsp
Salt1 tsp
Turmeric1 tsp
Wheat flour50 grams
Water100 ml
CorianderAs per taste
GingerAs per taste
 Green chilis2

FOR NIHARI MASALA

Saunf1 tbsp
Cumin seeds1tbsp
Coriander seeds1tbsp
peppercorn1 tbsp
Cinnamon1 inch
Black cardamon2
Green cardamon5
cloves5
Bay leaf2

HOW TO MAKE GOSHT NIHARI

  • In a pan heat the olive oil on medium flame until hot
  • Add the ginger paste and garlic paste and sauté for a few minutes on medium heat
  • Then add the mutton/beef and cook until the color changes
  • While the mutton/beef is cooking, crush the fennel seeds, cumin seeds, coriander seeds, black peppercorns, cinnamon, black cardamom, green cardamom, cloves, and bay leaves to convert it into a powder form.
  • Now, add the nihari masala powder, chili powder, turmeric powder, and salt then cook the spices for 4-5 minutes
  • Add the water and cook for a further 2 hours on low heat until the meat is tender
  • In a single bowl, mix the wheat flour and 100ml of water to make a smooth paste – this flour mixture acts as a stiffening agent, if you want to thick it more then add more flour to it.
  • Add this mixture into the pan then cover up with a lid and cook for 30 minutes.
  • Heat the olive oil in another pan on medium heat
  • Add the onions and fry them until browned
  • Add these onions to the meat along with the chopped coriander, ginger, and chilies.
